As an apprentice, I was exposed in different kitchen sections in different restaurants in Hongkong Jockey Clubhouse, I spent more time in Western cuisine's fine dining restaurant and experienced to work in cold ladder section, hot section (fish, meat and vegetable ), and even in pass section respectively. In every section I am assigned during my six month internship, I used to help kitchen staff for preparing mis en place for the set menu courses we will be serving the guests in every section.
Resident Cook

I worked as a resident cook in the house of the Philippine ambassador where I cooked lunch and dinner respectively. While working at her residence, I am also studying and finishing my two-year Culinary diploma in Royal Academy of Culinary Arts. As her Resident cook, I usually prepare and cook food for her visitors especially during special occasions which include embassy staff from Philippines and other ASEAN countries. I make my own 3-course menu for a fine dining set up.

-after the buffet, cleans all station and refills condiments and then store them in the fridge with proper labels

-ensures that fridges and freezers are clean
