As an R&D Trainee I perform the following duties. ? Assist with new raw material sourcing (coordinating with suppliers, food safety/ingredient hazard analysis, regulatory compliance, Allergens, kosher/hallal certification, MSDS, drawing up ingredient specs as per regulations.? Participate in bench scales and commercial trials for new products/line extension or compliance to food regulations.? Formulation development and costing.? Nutritional check of formulation.? Identify processing parameters in the factory.? Product technical evaluation (chemical and physical analysis, sensory evaluation, etc.)? Check microbial safety and define shelf life.? Artwork check ? ingredients declaration, nutritional table, NRV?s, health claims.? Product launch preparation (final check to ensure consumer safety, personnel training, etc.).? Conduct trials at co-man? Post launch support/monitoring production records, process parameters.? Record keeping of trial reports, nutritional, chemistry data.? Manage new ingredients data base with QA and Procurement.
